About the food
What is fufu?
Fufu is a traditional West African staple made by pounding cassava, plantain, or yam into a smooth, stretchy dough. It is served with soups like light soup, egusi, or palm nut soup. You pinch off a small ball, make an indent with your thumb, and use it to scoop the soup - no utensils needed.
What is waakye?
Waakye (pronounced waa-chay) is a Ghanaian dish of rice and black-eyed peas cooked together with dried sorghum leaves, which give it a distinctive reddish-brown colour. It is typically served with stew, fried fish, boiled eggs, spaghetti, and shito.
What is banku?
Banku is a fermented Ghanaian staple made from a blend of corn and cassava dough. It has a slightly sour taste and a smooth, stretchy texture. It is commonly served with grilled tilapia, hot pepper sauce, and fresh vegetables.
Is Ghanaian jollof rice different from Nigerian jollof rice?
Yes - and the debate is very much alive. Ghanaian jollof is cooked with a fragrant spiced tomato base and known for its smoky, firm grains. We use long-grain rice slow-cooked in blended tomatoes, peppers, and aromatic spices.
Is Ghanaian food spicy?
It can be, but it doesn't have to be. Many dishes are deeply flavourful and aromatic rather than intensely hot. You can request mild, medium, or spicy - our kitchen accommodates all heat preferences.
What is kelewele?
Kelewele is a popular Ghanaian street snack: ripe plantains cut into cubes, marinated in ginger, cayenne, and spices, then deep-fried until crispy outside and soft inside.
What is suya?
Suya is a West African spiced meat skewer - typically beef - coated in a dry rub of groundnut powder, ginger, paprika, and spices, then grilled over an open flame.
